Stone-milled wheat flour sifted to 60 mesh for a finer, lighter texture while still keeping more flavor and nutrition than a typical roller-milled white flour.
This is not a cake or pastry flour, but it does bake lighter than our unsifted and 40 mesh flour. Expect a softer crumb and a bit more lift while still keeping some color and character from the grain.
The wheat we use for this flour is grown on our family's certified organic farm, but this flour itself is not currently sold as a certified organic product.
