🌾 About Our Flour

What makes our flour different?

Our flour reflects how our farm operates. Schultz Farms is a family farm, with the growing, harvesting, on-farm storage, stone milling, and packaging overseen and carried out on the farm by a single primary operator.

We grow the wheat ourselves, harvest it with our own equipment, store it on-farm, stone-mill it in small batches, and package each bag by hand. All steps take place at our farm, with no blending, outsourcing, or off-farm processing.

This direct, on-farm approach ensures full traceability and accountability from our fields to your kitchen.


Is the flour organic?

Our fields and grain are certified organic through OCIA, one of the strictest certifiers.

Our handling certification is in progress, so we don’t label the flour as organic yet — but the wheat itself is grown using full organic methods with no pesticides, herbicides, or synthetic inputs of any kind.


What’s the difference between Unsifted, 40 Mesh, and 60 Mesh?

Unsifted Whole Wheat: Full bran + germ, the most nutrient-rich and hearty

40 Mesh Baking Flour: Lightly sifted for better rise while keeping whole-grain flavor

60 Mesh All Purpose Flour: Our softest and smoothest flour — great for softer breads, pancakes, cookies, etc.


What can I use each flour for?

Unsifted: Hearty breads, sourdough, rolls, cookies, pancakes

40 Mesh: Sandwich loaves, artisan bread, pizza dough, focaccia

60 Mesh: Soft loaves, pancakes, waffles, cookies, quick breads

Bran: Muffins, breakfast bowls, smoothies, fiber boost for any bake


Does stone-milled flour behave differently?

Yes — stone-milled flour has more natural oils and flavor, and it absorbs water differently. Start with slightly higher hydration and adjust as needed.


Why is your flour more flavorful?

Because we mill it in small batches and never remove the wheat’s natural parts. The flour hasn’t been sitting in a warehouse for months.


🌾 Do you sell wheat berries?

We grow certified organic hard red winter wheat right here on our farm.

Whole wheat berries are something we plan to offer in the future, but they are not available just yet.

If you're interested, let us know — we’d love to hear from you and will keep you in mind when they become available.

If enough interest builds, we may prioritize offering them sooner.

How should I store the flour?

Cool, dry place for short-term

Refrigerator or freezer for long-term freshness
Keep sealed to protect natural wheat oils


How long does it stay fresh?

Pantry: ~3 months
Refrigerator: 6+ months
Freezer: up to 1 year


When will my order ship?

Orders are typically shipped within 1 business day from our farm in western Kansas.

Because our local post office dispatches shipments in the morning, orders may occasionally go out the following day depending on timing.


Do you offer local pickup?

Not yet, but we hope to in the future.


Do you ship outside the United States?

Not at this time.

My package arrived damaged — what should I do?

Email us right away with your order number and photos. We’ll make it right.


What if I put in the wrong address?

If the order hasn’t shipped, we can fix it. If it was already sent, there may be a reshipping cost.
