Stone-milled wheat flour sifted to 40 mesh. This flour keeps much of the whole-grain character but removes some of the largest bran pieces for a smoother texture and stronger rise in hearty breads.
It is not a white flour. Think of it as a robust, bread-focused flour that still has plenty of flavor, color, and nutrition from the bran and germ.
The wheat we use for this flour is grown on our family's certified organic farm, but this flour itself is not currently sold as a certified organic product.

Origin
Grown, harvested, milled, sifted, and packed on our family farm on the High Plains of Western Kansas.
